To cook slowly, for the winter holidays
Our sopresse, salami and ossocollo are made in our own workshop: the meat is prepared, stuffed into casings and tied here; they don't come in ready-made.
Curing can't be rushed. When a salume runs out, the next one comes when it's ready: that's why we tell you what's in today.
You book by phone or WhatsApp and collect at the shop, chosen and cut at the counter.
As it cures, a salume loses about a third of its weight: a kilo of mixture gives roughly 700 grams of sopressa. Add to that the months of waiting, the carefully chosen pork and the work behind every piece, from the meat to the curing.
The price at the counter reflects all of this. If you'd like to know how we make a salume, just ask: we're happy to tell you.
Since 1940
Salumeria Miatto has been making salumi since 1940. Today the shop is in Via Ungheresca, in the Bolda area of Santa Lucia di Piave, and Michel Miatto runs it with the same idea as ever: a few salumi, made well.
Between Conegliano and the Piave river, a few minutes from Conegliano, Susegana and Mareno di Piave.
